~Foods of the Rainbow~

Last week at the farmer's market, there was a table set up with an assortment of peppers. They were all so beautiful and only $1.50 for a basket. I just had to get some and was happy to have a recipe to try out. I may not be able to say it very well...I sure can cook it very well. Wow these were amazing! And although they're not very kid friendly all of the sides (refried black beans, polenta, and guacamole) were and I just made quesadilla's for the girls. They sure were interested and curious of our peppers...maybe one day!

I know this isn't a picture perfect plate but it was late after a full day of family fun and oh so worth the post anyway!

When we woke up this morning, it was just like any ole morning. After the girls spend time jumping around in our bed to get us up, they run to the pantry and pull out around 4 boxes of cereal and proceed to eat at least two bowls each mixing 'em all together. Today I was like...don't you want something different?? How 'bout pancakes today...just to find out I'm all out of the easy peasy box mix. Guess we'll just have to make them from scratch....

CHOCOLATE CHIP BANANA PANCAKES

1 cup of wheat flour



1/2 cup of white flour



2 tablespoons sugar



2 teaspoons baking powder



3/4 t sea salt




mix



1 large egg lightly beaten and 2 tablespoons olive oil



1 1/3 cup Milk



Mix and add one really ripe mashed banana



stir in handful of dark/semi-sweet chocolate chips~1/2+cup



Cook 1/4 cup pours on preheated griddle

PANCAKES.

I just can't help myself! There are soooo many superfoods that I just have to post over and over again! Guess what?!?! I'm not gonna stop! And today it is the fabulous CANTALOUPE

I'll never stop talking about all the deliciously wonderful fresh foods out there and share with you the adventures in feeding and eating with a two and four year old. ~Tools of the Trade~

Computer Time! At a very young age, Rita was sitting in my lap pounding on the key board. She loves it just as much today as she did back then...



This site is used in Rita's pre-school class and she LOVES it! She would sit at the computer for hours if I let her.



Ruby not quite as early but now she's excited to get to do it all by herself!

We aren't very high tech parents...we are very simple and basic. Our girls don't really watch very much TV at all...but I feel like computer time is quite important in the developmental process today. Not sure what the future holds in that department...I guess we'll just let our lil surfer girls lead the way!

Some times my mind plays tricks on me...having babies sucked all my brain cells out or maybe it's just old age! But, I must have forgotten that I read this book because I quickly realized that I did indeed when the words soon became all too familiar to me. I stumbled across it (again apparently) reading through someone's recommended reads and here I find myself reading it again...it is truly worth the read (re-read)...

I am a one hit wonder kind of a cook. Seems like I'm not able to repeat a dish exactly the same. I really like looking up a recipe here and there and then combining them with some other personal favorite ingredients and presto...

I encourage you to discover your inner chef and experiment with the art of cooking! At the end of the day, the most valuable "art" is sitting together as a family, eating wholesome healthy meals that you've all played a role in creating!

Tofu is a good source of protein and a lot leaner than meats. It' like a sponge and just absorbs all the flavors you add too it. Toss if with you choice of veggies and brown rice or quinoa and you will be doing your body GOOD!

~Nutrition in a Nutshell~

Sorry for my absence...my how time flies! Have lots of work in progress with partial entries waiting to be posted. My delay as always seems to be in organizing the the number of photos continually being snapped from one of our two cameras and one is pretty much always with me! and if no camera then my cellphone is Kodak and actually takes really good photos.

TODAY we look at the super food ....SWEET POTATO ...YUM!YUM! Doesn't have to be Thanksgiving to enjoy...and fyi the marshmallows kind of cancel the super food value out. Next time i'll try it as a pasta filler with ricotta cheese(look for the recipe in ~Foods of the Rainbow~ soon) It's also one of those foods that make for easy and delicious baby food! Making your own baby food really is easy and then you know exactly what is going into your baby. Buy a few jars of commercial baby food to study the consistency and ease your worries a bit and then find a few easy favorites to make, then you can just store them in the jars...reduce, reuse, and recycle...yea!

It's been a while since we had sweet potatoes in our meal planning. We made up for lost time by having them three times in the last couple of weeks! They are super yummy and oh so good for you!
